Living Lemony

Today is a cold and snowy winter day. I decided to head out early to do a few errands before the roads became treacherous.

I had to collect a few things from the market.  As I walked toward the produce department, I glanced at the “supermarket flowers.”  Flowers would be a happy addition to my kitchen table, I thought.

Although I believe that all flowers are beautiful, these looked a little worse for the wear. They looked exhausted, as a matter of fact.

Disappointed, I decided to forgo them.

I passed by the array of apples, pears, and oranges. The lemons caught my eye. Impactful, with their bright, cheerful color, they proudly stood on display.

I tore off the plastic baggy above the bin and gathered about ten of them, brought them home and put them in my favorite crystal bowl.

I’ve got a bowl of sunshine sitting in front of my windows while outside snow falls. A perfect juxtaposition

Lemons or any other citrus are a lovely way to brighten up your surroundings. Best yet? You can use them! Slice them up and toss them in your ice water, over your roasting chicken breast on make some lemonade! (My recipe is below.)

What you need:

  • 2 cups white sugar
  • 8 cups water
  • 1 3/4 cups fresh lemon juice – remove seeds but keep pulp one lemon, sliced
  • Mint sprigs, for garnish

What to do:

In a small saucepan bring 4 cups of water to a boil. Add sugar and stir it until it dissolves Cool to room temperature, and then cover and refrigerate until chilled. In a pitcher, stir together chilled syrup, lemon juice, and remaining water.
